Lighter Smoky New Potato Salad
Ok, I know your grandmother’s potato salad recipe is the best, but you should still give this one a try! It calls for small red new potatoes (these baby potatoes can often be bought quite cheaply) and light or reduced-calorie mayonnaise. If you’re feeling creative, you can find flavored reduced-calorie and reduced-fat mayonnaise spreads to use instead. You’ll also want some olive oil, paprika, and garlic on hand, in addition to a few other simple ingredients. You won’t even be able to tell it’s a lightened up version!
